Shrimp Tortilla Recipe
Shrimp tortillas are a delicious and easy-to-make Mexican dish that is perfect for a quick dinner or a casual get-together. They are made with soft tortillas, spicy shrimp, and a variety of toppings, and can be customized to suit your taste preferences. This recipe is for a classic shrimp tortilla, but you can add your favorite vegetables, cheeses, or sauces to give it more flavor.
Ingredients:
- 1 pound medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 6 small flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (such as cheddar or Monterey Jack)
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
Instructions:
- Preheat your grill to medium-high heat. Alternatively, you can use a stovetop griddle or a heavy skillet.
- In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, paprika, and salt. Coat the shrimp with the spice mixture.
- Grill the shrimp for 2-3 minutes on each side, or until they are pink and cooked through. Alternatively, you can cook the shrimp on a stovetop griddle or in a skillet over medium-high heat for the same amount of time.
- Warm the tortillas on the grill or in a dry skillet over medium heat for 1-2 minutes on each side, or until they are soft and pliable. Alternatively, you can wrap the tortillas in foil and heat them in the oven at 350°F (180°C) for 5-10 minutes.
- To assemble the tortillas, lay out a tortilla on a clean surface. Top it with some of the grilled shrimp, lettuce, tomatoes, cheese, cilantro, and red onion. Fold the tortilla in half and press gently to seal it. Repeat with the remaining tortillas and filling ingredients.
- Grill the tortillas for 1-2 minutes on each side, or until they are crispy and golden brown. Alternatively, you can cook them in a dry skillet over medium heat for the same amount of time.
- Serve the tortillas hot, with your choice of dipping sauces or toppings. They can be stored in the refrigerator for up to 3 days, but are best when served fresh.
Tips:
- Feel free to experiment with different toppings for your shrimp tortillas. Some popular options include avocado, sour cream, salsa, pickled jalapenos, or lime wedges.
- You can also use different types of seafood for your tortillas, such as scallops, squid, or mussels. Just be sure to adjust the cooking time as needed.
- For a vegetarian version of this recipe, you can use grilled or sautéed vegetables as the filling for your tortillas. Some good options include bell peppers, onions, mushrooms, zucchini, and eggplant.
