Pork Stroganoff

Ingredients:
- 1 pound pork tenderloin, thinly sliced
- 1 tablespoon olive oil

- 1/2 cup sour cream

Instructions:
- Heat the oil in a large skillet over medium-high heat. Add the pork and cook until browned on both sides, about 2-3 minutes per side. Remove the pork from the skillet and set aside.
- In the same skillet, add the onion and mushrooms. Cook until the vegetables are soft and the mushrooms are browned, about 5-7 minutes.
- Add the garlic and cook for an additional minute.
- Sprinkle the flour over the vegetables and stir to coat. Add the beef broth and stir to combine. Bring the mixture to a boil and let it simmer until thickened, about 5 minutes.
- Stir in the sour cream and parsley. Add the pork back to the skillet and stir to coat with the sauce. Season with salt and pepper to taste.
- Serve the pork stroganoff over noodles or rice.
Tips:
- You can use any type of mushroom you prefer in this recipe. White buttons, shiitake, or portobello mushrooms all work well.
- If you'd like to add some extra vegetables to the dish, feel free to stir in some sliced bell peppers or frozen peas during the last 5 minutes of cooking.
