Amazing Chili with Chipotle Chiles and Cilantro
This chili is packed with flavor thanks to the addition of smoky chipotle chiles and fresh cilantro. It's the perfect main dish for a cozy night in, and it's sure to become a new family favorite.
Ingredients:
- 1 pound ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 chipotle chile in adobo sauce, minced
- 1/4 cup chopped fresh cilantro
Instructions:
- In a large pot or Dutch oven, cook the ground beef over medium heat until it's browned, breaking it up into small pieces as it cooks. Drain any excess fat.
- Add the onion, bell pepper, and garlic to the pot and cook until the vegetables are tender, about 5 minutes.
- Stir in the diced tomatoes, kidney beans, beef broth, tomato paste, chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
- Stir in the minced chipotle chile and cilantro. Cook for an additional 5 minutes to allow the flavors to meld.
- Serve the chili hot, garnished with additional cilantro if desired.
Tips:
- For a thicker chili, use less broth or add an additional can of beans.
- For a spicier chili, add more chipotle chiles or use a hotter variety of chili powder.
- To save time, prepare the chili in a slow cooker. Simply brown the beef and onion, then transfer to a slow cooker along with the remaining ingredients. Cook on low for 6-8 hours or on high for 3-4 hours.
