Ingredients:

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 chipotle chile in adobo sauce, minced
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until it's browned, breaking it up into small pieces as it cooks. Drain any excess fat.
  2. Add the onion, bell pepper, and garlic to the pot and cook until the vegetables are tender, about 5 minutes.
  3. Stir in the diced tomatoes, kidney beans, beef broth, tomato paste, chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
  4. Stir in the minced chipotle chile and cilantro. Cook for an additional 5 minutes to allow the flavors to meld.
  5. Serve the chili hot, garnished with additional cilantro if desired.

Tips:

  • For a thicker chili, use less broth or add an additional can of beans.
  • For a spicier chili, add more chipotle chiles or use a hotter variety of chili powder.
  • To save time, prepare the chili in a slow cooker. Simply brown the beef and onion, then transfer to a slow cooker along with the remaining ingredients. Cook on low for 6-8 hours or on high for 3-4 hours.
This hearty chili is sure to become a family favorite! Its smoky flavor from the chipotle chiles is balanced out by the fresh cilantro, making it a well-rounded and satisfying meal.
