Beef Stew with Pepper and Onion in the Pot
This hearty beef stew is filled with tender chunks of beef, peppers, and onions and simmered in a rich tomato broth. It's the perfect comfort food for a cold winter's day.Ingredients:
- 1 1/2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
- Add the onion, bell peppers, and garlic to the pot and cook until the vegetables are tender, about 5 minutes. Stir in the diced tomatoes, beef broth, tomato paste, oregano, salt, and black pepper.
- Return the beef to the pot and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer until the beef is tender, about 1 hour and 15 minutes.
- Serve the beef stew hot, garnished with chopped fresh herbs if desired.
Tips:
- To add extra flavor to the stew, try adding a bay leaf or a few sprigs of fresh thyme while it simmers.
- For a thicker stew, mix together 2 tablespoons of cornstarch and 2 tablespoons of water in a small bowl until smooth. Stir the cornstarch mixture into the stew during the last 15 minutes of cooking.
- To make this recipe even easier, use a slow cooker. Simply brown the beef and sauté the vegetables as directed, then transfer everything to the slow cooker and cook on low for 8 hours or on high for 4 hours.
This beef stew is the ultimate comfort food, perfect for a cold winter's day. The combination of tender beef, peppers, and onions in a rich tomato broth is sure to satisfy your cravings for something hearty and satisfying. Serve it with a side of crusty bread for dipping and you've got a meal that's sure to impress.
