Ingredients:
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons active dry yeast
- 4 cups all-purpose flour
- 2 teaspoons salt
- 1/2 cup baking soda
- 1 egg, beaten
- Coarse salt for sprinkling
Instructions:
- In a small bowl, combine the water, sugar, and yeast. Let the mixture sit for 10 minutes or until it becomes foamy.
- In a large mixing bowl, combine the flour and salt. Add the yeast mixture and mix until a dough forms.
- Turn the dough out onto a floured surface and knead for 8-10 minutes or until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour or until it has doubled in size.
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Bring a large pot of water to a boil and add the baking soda. Divide the dough into 8 equal pieces and roll each piece into a long rope. Tie each rope into a knot and place it on the prepared baking sheet.
- Brush the knots with the beaten egg and sprinkle with coarse salt. Bake for 15-20 minutes or until the knots are golden brown.
Tips:
- You can add herbs or spices to the dough for extra flavor. Try adding a teaspoon of herbs de Provence or some finely grated cheese.
- If you want a softer crust, omit the baking soda bath and egg wash. Simply brush the knots with melted butter before baking.
- For a fun twist, try filling the knots with cheese, ham and cheese, or even peanut butter and jelly before baking.
