BBQ Chicken Pizza Roll-Up Recipe
These BBQ chicken pizza roll-ups are a fun and delicious twist on traditional pizza. They're easy to make and perfect for a weeknight dinner or a party appetizer. The creamy ranch dressing and tangy BBQ sauce give them a tasty kick, while the melted cheese and tender chicken make them irresistibly gooey and flavorful.
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1/2 cup ranch dressing
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1 package refrigerated pizza dough
Instructions:
- Preheat your oven to 400°F (200°C).
- In a small saucepan, cook the chicken breasts over medium heat until they are cooked through, about 8-10 minutes. Shred the chicken using two forks or a stand mixer with the paddle attachment.
- In a small bowl, mix together the BBQ sauce and ranch dressing. Set aside.
- On a lightly floured surface, roll out the pizza dough into a large rectangle. Spread the BBQ sauce mixture evenly over the dough, leaving a 1-inch border around the edges. Sprinkle the shredded chicken, mozzarella cheese, cheddar cheese, red onion, and bell pepper over the top.
- Starting at one of the long sides, roll the dough up tightly into a log. Place the log seam-side down on a baking sheet. Bake for 20-25 minutes, or until the dough is golden brown and cooked through.
- Let the roll-ups cool for 5-10 minutes before slicing them into 1-inch pieces. Serve warm.
