Chicken Kabobs Recipe
Chicken kabobs are a classic barbecue dish that are perfect for summer cookouts or anytime you want to enjoy grilled, marinated chicken. This recipe calls for marinating the chicken in a simple but flavorful mixture of oil, lemon juice, and spices, then skewering the chicken with vegetables and grilling it to perfection. You can serve the chicken kabobs with rice, salads, or any other side dishes you like, or you can use the chicken and vegetables to make sandwiches, wraps, or bowls.
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium red bell pepper, seeded and cut into 1-inch pieces
- 1 medium green bell pepper, seeded and cut into 1-inch pieces
- 1 medium yellow onion, cut into 1-inch pieces
- 8-10 cherry tomatoes
Instructions:
- In a small bowl, whisk together the olive oil, lemon juice, paprika, garlic powder, onion powder, oregano, salt, and pepper to make the marinade.
- In a large resealable bag or a shallow dish, place the chicken cubes and pour the marinade over them. Toss the chicken to coat it evenly with the marinade, then cover the bag or dish and refrigerate the chicken for at least 1 hour, or up to 24 hours.
- Preheat the grill to medium-high heat (about 375-400°F).
- Soak the skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Thread the chicken and vegetables onto the skewers, alternating between the different ingredients. You can use any combination of vegetables you like, such as zucchini, mushrooms, cherry tomatoes, or pineapple chunks.
- Brush the grill with oil to prevent the chicken from sticking, then place the skewers on the grill. Grill the kabobs for 10-12 minutes, turning them occasionally, until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should be at least 165°F.
- Serve the kabobs hot, with any desired accompaniments or sauces.
Tips:
- To add more flavor to the kabobs, you can marinate the chicken and vegetables in a variety of different sauces or seasonings. Some popular options include yogurt-based marinades, such as tzatziki or raita, or spicy marinades, such as chimichurri or harissa.
- If you prefer your kabobs to be a little sweeter, you can add a touch of honey or brown sugar to the marinade, or you can brush the kabobs with a glaze made from honey, mustard, or BBQ sauce while they are grilling.
- To make the kabobs more colorful and attractive, you can use a variety of different vegetables, such as red onions, purple potatoes, or yellow squash, or you can mix and match different colors of bell peppers.
- To prevent the chicken and vegetables from drying out on the grill, you can baste them with the marinade or oil while they are cooking.
- If you don't have a grill, you can also cook the kabobs in the oven or on a stovetop griddle. Just be sure to adjust the cooking time and temperature accordingly.
