Veggie Ball Recipe
Veggie balls are a healthy and flavorful vegan alternative to meatballs that are made with a variety of vegetables, grains, and seasonings. They are easy to make and can be customized to suit your taste preferences. This recipe is for a classic veggie ball, but you can add your favorite herbs, spices, or sauces to give them more flavor.
Ingredients:
- 1 cup cooked quinoa
- 1 cup grated carrots
- 1 cup grated zucchini
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, mix together the cooked quinoa, grated carrots, grated zucchini, breadcrumbs, parsley, basil, garlic, egg, salt, and pepper.
- Use your hands to form the mixture into small, round balls, about the size of a golf ball. Place the balls on the prepared baking sheet.
- Bake the veggie balls for 20-25 minutes, or until they are crispy and golden brown. Alternatively, you can pan-fry the balls in a little oil over medium heat for 5-7 minutes on each side, or until they are crispy and browned.
- Serve the veggie balls hot, with your choice of dipping sauces or as part of a larger meal. They can be stored in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
- To add flavor to the veggie balls, you can mix herbs, spices, or sauces into the mixture before shaping it. Some popular options include garlic, Parmesan cheese, chili flakes, or tomato sauce.
- You can also use different types of vegetables for your veggie balls, such as sweet potatoes, beets, or eggplant. Just be sure to adjust the cooking time as needed.
- For a gluten-free version of this recipe, you can use gluten-free breadcrumbs or omit the breadcrumbs entirely and use a different binding agent, such as ground flaxseed or chia seeds.
