- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 1 can (13.5 ounces) coconut milk
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions:
- Heat the oil in a large saucepan over medium heat. Add the onion and cook until it is soft and translucent, about 5 minutes.
- Add the chicken to the saucepan and cook until it is no longer pink, about 5 minutes.
- Add the garlic, curry powder, cumin, turmeric, coriander, and cayenne pepper (if using) to the saucepan and stir to coat the chicken and onions. Cook for 1 minute until fragrant.
- Stir in the coconut milk, chicken broth, tomato paste, sugar, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
- Stir in the chopped cilantro and serve the curry hot over rice or with naan bread.
Tips:
- For a spicier curry, increase the amount of cayenne pepper or add some chopped fresh chilies to the sauce.
- You can also add some vegetables to the curry, such as bell peppers, carrots, or peas. Just add them along with the chicken in step 2.
- If you prefer a thicker curry, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the sauce in step 4. This will help to thicken it up.
