Vegetable Skewer Recipe
Vegetable skewers are a fun and flavorful way to enjoy a variety of vegetables on the grill or in the oven. They are easy to make and can be customized to suit your taste preferences. This recipe is for a classic vegetable skewer, but you can add your favorite herbs, spices, or sauces to give them more flavor.
Ingredients:
- 1 pound mixed vegetables (such as bell peppers, onions, mushrooms, zucchini, and cherry tomatoes)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
- Preheat your grill to medium-high heat. Alternatively, you can preheat your oven to 400°F (200°C).
- Cut the vegetables into bite-sized pieces and thread them onto skewers. You can use wooden or metal skewers, but if you are using wooden skewers, be sure to soak them in water for at least 20 minutes to prevent them from burning.
- In a small bowl, mix together the olive oil, minced garlic, salt, and pepper. Brush the vegetables with the olive oil mixture, making sure to coat them evenly.
- Grill the skewers for 8-10 minutes, turning them occasionally, or until the vegetables are tender and lightly charred. Alternatively, bake the skewers in the preheated oven for 15-20 minutes, or until the vegetables are tender and lightly browned.
- Serve the vegetable skewers hot, as a side dish or an appetizer. They can be stored in the refrigerator for up to 3 days, or in the freezer for up to 3 months.
Tips:
- To add flavor to the vegetable skewers, you can mix herbs, spices, or sauces into the olive oil mixture before brushing the vegetables. Some popular options include chopped fresh parsley, basil, or rosemary, or a pinch of red pepper flakes.
- You can also use different types of vegetables for your skewers, such as eggplant, asparagus, or sweet potatoes. Just be sure to adjust the cooking time as needed.
- For a protein-rich addition to the skewers, you can add tofu, tempeh, or seitan to the mix. You can also use seafood or meat, such as shrimp, chicken, or beef, if you prefer.
