Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 cup cold unsalted butter, cut into small pieces
- 2 cups diced rhubarb
- 2 cups diced strawberries
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
Instructions:
- Preheat the oven to 350°F (180°C). Line a 9x13-inch baking pan with parchment paper or foil, leaving an overhang on the sides.
- In a medium bowl, mix together the flour, oats, brown sugar, and cinnamon. Using a pastry cutter or your fingers, cut in the butter until the mixture is crumbly. Set aside 1 cup of the mixture for the topping.
- Press the remaining mixture into the bottom of the prepared pan. Bake for 10 minutes, or until the edges are lightly golden.
- Meanwhile, in a large saucepan, mix together the rhubarb, strawberries, granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens. Remove from heat.
- Pour the strawberry-rhubarb mixture over the baked crust. Sprinkle the reserved crumble mixture over the top. Bake for an additional 25-30 minutes, or until the topping is golden and the filling is bubbly.
- Remove from the oven and let cool completely before cutting into bars. Serve and enjoy!
Tips:
- For extra flavor, add a teaspoon of vanilla extract to the filling mixture.
- You can use fresh or frozen fruit for this recipe. If using frozen fruit, be sure to thaw and drain it before using.
- These bars can be stored in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
These strawberry-rhubarb crumble bars are a delicious and easy dessert that will impress your friends and family. The combination of sweet and tart flavors is unbeatable, and the crumbly topping adds the perfect finishing touch.
