Beef Wellington

Ingredients:

  • 1 beef fillet (about 1.5 lbs)
  • 1 package puff pastry
  • 1 jar liver pâté
  • 1 egg, beaten
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 425F. Roll out the puff pastry on a lightly floured surface to a large rectangle, about 1/8 inch thick. Spread the pâté over the pastry, leaving a 1-inch border all around. Place the beef fillet on top of the pâté, then brush the border with the beaten egg.
  2. Fold the pastry over the beef, sealing the edges with a fork. Place the beef Wellington on a baking sheet and brush the top with the remaining beaten egg.
  3. Bake the beef Wellington in the preheated oven for 25-30 minutes, until the pastry is golden brown and puffed. Remove from the oven and let it rest for 10 minutes before slicing.
  4. While the beef Wellington is cooking, heat the olive oil in a large pan over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  5. Add the beef broth, Worcestershire sauce, thyme, salt, and pepper to the pan. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  6. Serve the beef Wellington with the sauce on the side.

Tips:

  • Make sure to properly seal the beef by pressing the edges of the pastry together firmly.
  • You can use a meat thermometer to ensure that the beef is cooked to your desired level of doneness.
  • If you have any leftover pastry, you can use it to decorate the top of the Beef Wellington by cutting it into shapes and brushing it on top before baking.
