Beef Stew Rolls

Ingredients:
- 1 pound beef stew meat
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/2 cup frozen peas
- 1/2 cup frozen carrots
- 4 frozen puff pastry sheets, thawed
- 1 egg, beaten
Instructions:
- Preheat oven to 400°F (200°C).
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef and cook until browned on all sides, about 5 minutes.
- Add onion and garlic and cook for an additional 2 minutes, until onion is translucent.
- Stir in beef broth, red wine, tomato paste, rosemary, thyme, and bay leaf. Bring to a boil, then reduce heat to low and simmer for 1 hour.
- Add peas and carrots to the pot and simmer for an additional 15 minutes.
- Remove bay leaf from the pot. Spoon the beef mixture into the center of each puff pastry sheet. Brush edges of pastry with beaten egg and fold over the filling, pressing edges to seal.
- Place the rolls on a baking sheet and brush the tops with remaining beaten egg. Bake for 20-25 minutes, until pastry is puffed and golden brown.
