Taiwan Beef Noodles

This hearty Taiwanese beef noodle soup is made with tender chunks of beef, chewy noodles, and a flavorful broth. It's the perfect comfort food for a cold day.

Ingredients:

  • 1 pound beef chuck roast, cut into 1-inch chunks
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon Chinese five-spice powder
  • 6 cups beef broth
  • 1 cup water
  • 1 medium carrot, peeled and cut into thin slices
  • 4 ounces shiitake mushrooms, stemmed and thinly sliced
  • 1 pound fresh Chinese noodles or spaghetti
  • 1 bunch bok choy, trimmed and cut into 1-inch pieces
  • 1 green onion, thinly sliced

Instructions:

  1. In a large pot or Dutch oven, heat the oil over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
  2. Add the onion, garlic, soy sauce, hoisin sauce, and Chinese five-spice powder. Cook, stirring occasionally, until the onions are softened, about 5 minutes.
  3. Pour in the beef broth and water. Bring to a boil, then reduce the heat to low and simmer for 1 hour.
  4. Add the carrot, mushrooms, and noodles to the pot. Bring to a boil, then reduce the heat to low and simmer for 5 minutes.
  5. Stir in the bok choy and cook for an additional 2 minutes, or until the noodles are tender and the bok choy is wilted.
  6. Serve the soup hot, garnished with green onions.

Tips:

  • For a spicy twist, add a few dried chili peppers or a spoonful of chili oil to the pot.
  • Feel free to substitute the noodles with your favorite type of pasta, such as spaghetti or udon.
